1、看(kan)色(se)澤(ze):良質(zhi)豆腐干,呈乳白色(se)或淺黃(huang)色(se),有光(guang)澤(ze);次(ci)質(zhi)豆腐干,比(bi)正常豆腐干的(de)顏(yan)色(se)深;劣質(zhi)豆腐干,色(se)澤(ze)呈深黃(huang)色(se)略微發紅或發綠,無光(guang)澤(ze)或光(guang)澤(ze)不均(jun)勻(yun)。
2、看質(zhi)(zhi)地(di):良質(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)地(di)細膩,邊(bian)角整齊(qi),有(you)一(yi)定的彈(dan)性,切(qie)(qie)開(kai)處擠(ji)壓不出(chu)水,無雜質(zhi)(zhi);次質(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)地(di)粗糙,邊(bian)角不齊(qi)或缺損(sun),彈(dan)性差且易(yi)被折粘,切(qie)(qie)口(kou)處可(ke)擠(ji)壓出(chu)水珠(zhu);劣質(zhi)(zhi)豆腐(fu)干,質(zhi)(zhi)地(di)粗糙無彈(dan)性,表面粘滑(hua),切(qie)(qie)開(kai)時(shi)粘刀,切(qie)(qie)口(kou)擠(ji)壓時(shi)有(you)水流出(chu)。
3、嘗(chang)味(wei)(wei)(wei)(wei)(wei)道(dao):良質豆腐(fu)(fu)干,具有(you)(you)豆腐(fu)(fu)干特有(you)(you)的清(qing)香氣味(wei)(wei)(wei)(wei)(wei),無其他異味(wei)(wei)(wei)(wei)(wei),滋(zi)(zi)味(wei)(wei)(wei)(wei)(wei)純正,咸淡(dan)適口;劣質豆腐(fu)(fu)干,有(you)(you)餿味(wei)(wei)(wei)(wei)(wei)、腐(fu)(fu)臭味(wei)(wei)(wei)(wei)(wei)、酸味(wei)(wei)(wei)(wei)(wei)、苦澀(se)味(wei)(wei)(wei)(wei)(wei)等不良滋(zi)(zi)味(wei)(wei)(wei)(wei)(wei)。
