一、燒麥的做法和配料

二、燒麥蒸多久能熟

三、燒麥怎樣包

四、燒麥餡的做法和配料
燒麥(mai)(mai)(mai)餡(xian)(xian)(xian)(xian)(xian)(xian)一般(ban)有(you)純(chun)肉(rou)(rou)燒麥(mai)(mai)(mai)餡(xian)(xian)(xian)(xian)(xian)(xian)和(he)糯米燒麥(mai)(mai)(mai)餡(xian)(xian)(xian)(xian)(xian)(xian)兩種(zhong),兩種(zhong)燒麥(mai)(mai)(mai)餡(xian)(xian)(xian)(xian)(xian)(xian)的(de)(de)做法分別是:1、純(chun)肉(rou)(rou)燒麥(mai)(mai)(mai)餡(xian)(xian)(xian)(xian)(xian)(xian):(1)準備牛(niu)肉(rou)(rou)5kg、干(gan)姜(jiang)粉(fen)200g、花(hua)(hua)椒粉(fen)兩把(ba)約50g、鹽適(shi)量(liang)、亞(ya)麻(ma)籽(zi)油(you)適(shi)量(liang)、土豆淀(dian)粉(fen)適(shi)量(liang)。(2)將(jiang)肉(rou)(rou)絞(jiao)成餡(xian)(xian)(xian)(xian)(xian)(xian)兒,肥瘦比例為4:6,肉(rou)(rou)加入(ru)油(you)攪(jiao)(jiao)拌均勻,干(gan)姜(jiang)粉(fen)、花(hua)(hua)椒粉(fen)、味精(jing)放(fang)入(ru)。(3)攪(jiao)(jiao)拌好的(de)(de)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)加水(shui),沒過肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)。水(shui)滲入(ru)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)后,泡1小時左右,將(jiang)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)打(da)(da)成蓉狀。(4)攪(jiao)(jiao)打(da)(da)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian),用(yong)手按(an)照一個方向(順時針或(huo)逆時針)攪(jiao)(jiao)拌,將(jiang)原本(ben)疙疙瘩瘩的(de)(de)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)打(da)(da)的(de)(de)順滑、變軟,繼續浸泡,重復(fu)攪(jiao)(jiao)打(da)(da)三至四次,直到(dao)水(shui)完全滲入(ru)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)當(dang)(dang)中。(5)加入(ru)鹽、亞(ya)麻(ma)籽(zi)油(you)。將(jiang)熱水(shui)倒(dao)入(ru)土豆淀(dian)粉(fen)當(dang)(dang)中制作粉(fen)面,然后加入(ru)肉(rou)(rou)餡(xian)(xian)(xian)(xian)(xian)(xian)與(yu)肉(rou)(rou)打(da)(da)勻,放(fang)入(ru)蔥(cong),將(jiang)適(shi)量(liang)亞(ya)麻(ma)籽(zi)油(you)灑(sa)在蔥(cong)上,以免蔥(cong)出(chu)水(shui)。
2、糯(nuo)米燒賣餡(xian):(1)準備糯(nuo)米250克(ke)、香(xiang)(xiang)(xiang)菇4朵、胡(hu)蘿卜半根、生(sheng)抽3勺、蠔(hao)油(you)(you)(you)適量、洋蔥三分之一(yi)個、玉(yu)米粒適量、豆米適量、豬肉餡(xian)適量、豬油(you)(you)(you)適量。(2)各種(zhong)食材(cai)全部(bu)(bu)切(qie)碎;豬肉餡(xian)加入淀(dian)粉、生(sheng)抽預拌一(yi)下;糯(nuo)米提前(qian)像(xiang)煮(zhu)米飯(fan)一(yi)樣煮(zhu)好(hao)備用。(3)鍋里(li)倒(dao)豬油(you)(you)(you),加入拌好(hao)點的(de)肉沫翻(fan)炒(chao),炒(chao)好(hao)盛出(chu)(chu)。(4)鍋里(li)再加入豬油(you)(you)(you),放入除了香(xiang)(xiang)(xiang)菇以(yi)外的(de)食材(cai)翻(fan)炒(chao),炒(chao)一(yi)會后加入香(xiang)(xiang)(xiang)菇翻(fan)炒(chao);加入生(sheng)抽、蠔(hao)油(you)(you)(you)。(5)加入事(shi)先(xian)煮(zhu)好(hao)的(de)糯(nuo)米飯(fan),翻(fan)炒(chao),炒(chao)到全部(bu)(bu)均勻(yun),盛出(chu)(chu)即可。
