用(yong)(yong)(yong)羊(yang)下水做的(de)一(yi)道名(ming)饌。做法是將(jiang)羊(yang)肺子(zi)和(he)羊(yang)大腸(chang)洗凈,將(jiang)和(he)好的(de)面用(yong)(yong)(yong)水洗出面筋,呈(cheng)糊狀加油和(he)鹽,灌入(ru)面肺內,然(ran)后扎緊氣管(guan),放入(ru)水中(zhong)煮兩小時(shi)(shi)左右即(ji)(ji)成。米腸(chang)子(zi)是用(yong)(yong)(yong)切碎的(de)羊(yang)肝、羊(yang)心、羊(yang)腸(chang)油、加胡椒粉(fen)、孜然(ran)粉(fen)、精鹽拌入(ru)大米,用(yong)(yong)(yong)水煮,待半小時(shi)(shi),在腸(chang)中(zhong)扎眼使(shi)之漏氣,煮一(yi)小時(shi)(shi)即(ji)(ji)熟。
新疆(jiang)盛產牛(niu)(niu)羊(yang)(yang)(yang),是我國主要畜(chu)牧業(ye)基地之一。信仰伊斯蘭教的(de)(de)民族以食牛(niu)(niu)羊(yang)(yang)(yang)肉為主。牛(niu)(niu)羊(yang)(yang)(yang)肉風(feng)味(wei)小(xiao)吃名(ming)類繁(fan)多自不待言,就是以羊(yang)(yang)(yang)的(de)(de)內臟作(zuo)原料(liao),也能烹制出鮮香異常的(de)(de)美(mei)味(wei)來。米腸(chang)(chang)(chang)子與面(mian)(mian)肺子便是其中的(de)(de)代表。制作(zuo)米腸(chang)(chang)(chang)子和(he)(he)面(mian)(mian)肺子,一般都在宰羊(yang)(yang)(yang)之后(hou)(hou),細心地將(jiang)(jiang)(jiang)羊(yang)(yang)(yang)內臟完整地取(qu)出,用(yong)(yong)(yong)清(qing)水灌洗羊(yang)(yang)(yang)肺至(zhi)白凈無(wu)色,羊(yang)(yang)(yang)腸(chang)(chang)(chang)翻洗干凈備用(yong)(yong)(yong)。將(jiang)(jiang)(jiang)羊(yang)(yang)(yang)肝、心和(he)(he)少量腸(chang)(chang)(chang)油(you)切(qie)成(cheng)小(xiao)粒,加適量胡椒(jiao)粉、孜然(ran)粉、精鹽與洗凈的(de)(de)大米拌和(he)(he)均勻作(zuo)餡,填入羊(yang)(yang)(yang)腸(chang)(chang)(chang)內。再將(jiang)(jiang)(jiang)白面(mian)(mian)洗出面(mian)(mian)筋,待面(mian)(mian)水澄清(qing)后(hou)(hou),潷去(qu)大量清(qing)水,留少量清(qing)水攪動(dong)成(cheng)面(mian)(mian)漿(jiang),再取(qu)小(xiao)肚套在肺氣管上,用(yong)(yong)(yong)線縫接,然(ran)后(hou)(hou)把面(mian)(mian)漿(jiang)逐勺舀出倒入小(xiao)肚,擠(ji)壓入肺葉。再將(jiang)(jiang)(jiang)以少許精鹽、清(qing)油(you)、孜然(ran)粉、辣椒(jiao)粉調好的(de)(de)水汁用(yong)(yong)(yong)上述辦(ban)法擠(ji)壓入肺葉。然(ran)后(hou)(hou)去(qu)小(xiao)肚,用(yong)(yong)(yong)繩(sheng)扎緊氣管封口(kou)。再把米腸(chang)(chang)(chang)子、面(mian)(mian)肺子、洗凈的(de)(de)羊(yang)(yang)(yang)肚和(he)(he)卷有少許辣椒(jiao)粉用(yong)(yong)(yong)繩(sheng)扎的(de)(de)面(mian)(mian)筋入鍋煮(zhu)。煮(zhu)時還須在腸(chang)(chang)(chang)子中的(de)(de)大米半(ban)熟(shu)時,用(yong)(yong)(yong)釬(han)子遍扎腸(chang)(chang)(chang)壁,使之放(fang)氣放(fang)水,以防腸(chang)(chang)(chang)壁脹(zhang)破(po)。熟(shu)后(hou)(hou)取(qu)出,稍涼切(qie)片,混合食用(yong)(yong)(yong)。
米腸子與面肺子,腸糯鮮,肺軟嫩,羊肚、面筋有嚼勁(jing),香噴可口,風味(wei)獨特(te),不愧為新疆民族風味(wei)之佳品。
