米花糕(gao)(gao)(gao)是廣東省南雄的(de)傳統特產,味道(dao)酥脆、香甜。以前在農村,每年的(de)臘(la)月時(shi)節,主婦們都(dou)會制作這道(dao)美食(shi),用作過年招待客人(ren)(ren)的(de)年料。因為其制作過程較為復雜,所以現在越來(lai)越少人(ren)(ren)家制作米花糕(gao)(gao)(gao),只有(you)一些老店(dian)依然保持著手工(gong)制作米花糕(gao)(gao)(gao)。
米花糕的味道(dao)(dao)香酥(su)可口、又甜又糯,黃中帶亮,狀如蜂(feng)蛹、軟硬適中、香甜酥(su)脆,切成一小(xiao)片(pian)一小(xiao)片(pian)吃,這樣的味道(dao)(dao)會更加(jia)好。
它是用精(jing)白(bai)糯米(mi)(mi)(mi)蒸熟(shu),倒入竹制(zhi)“大模”用濕布覆嚴(yan)實,三(san)朝(即(ji)三(san)日)打(da)開(kai),手(shou)抹花(hua)生(sheng)油一(yi)小把(ba)(ba)(ba)一(yi)小把(ba)(ba)(ba)地將(jiang)(jiang)成團的糯米(mi)(mi)(mi)飯擦散成粒(li)(忌成團),然(ran)后曬干(gan)。這些準(zhun)備工(gong)(gong)(gong)(gong)作一(yi)般(ban)都在(zai)收冬后進(jin)行。農歷十(shi)二(er)月(yue)初(chu)開(kai)始加工(gong)(gong)(gong)(gong)米(mi)(mi)(mi)米(mi)(mi)(mi)呈,其工(gong)(gong)(gong)(gong)序一(yi)般(ban)分為四(si)個步驟:將(jiang)(jiang)米(mi)(mi)(mi)干(gan)再曬一(yi)個響午;進(jin)入第(di)二(er)工(gong)(gong)(gong)(gong)序即(ji)入鍋(guo)炒胖(用海沙入鍋(guo)加火(huo)燒熱(re));米(mi)(mi)(mi)干(gan)起鍋(guo)反復用手(shou)摩擦,并用糠篩把(ba)(ba)(ba)沙篩出成干(gan)凈米(mi)(mi)(mi)干(gan),此為第(di)三(san)工(gong)(gong)(gong)(gong)序;第(di)四(si)道工(gong)(gong)(gong)(gong)序則是煮白(bai)糖(tang),同時把(ba)(ba)(ba)米(mi)(mi)(mi)干(gan)跟花(hua)生(sheng)米(mi)(mi)(mi)、黑(hei)芝麻等混合(he)均勻,待白(bai)糖(tang)煮至適當火(huo)候(煮糖(tang)時加入一(yi)點檸檬酸、麥芽、蜂(feng)蜜(mi)),迅速(su)滅火(huo),將(jiang)(jiang)米(mi)(mi)(mi)干(gan)倒入另備好的鍋(guo)內快速(su)拌勻出鍋(guo),入木(mu)制(zhi)格內搬平,用木(mu)制(zhi)碾(nian)筒壓平碾(nian)實,用刀切成方塊或小長條,即(ji)成米(mi)(mi)(mi)干(gan)米(mi)(mi)(mi)呈。食來香脆爽口、清甜無(wu)比(bi)。
俗稱菽子。菽子成串(貓(mao)尾般(ban)狀)收成后脫(tuo)粒去殼,蒸熟曬干、碾白(過去用(yong)木碓石重白)。加工過程(cheng)跟(gen)米干米呈一(yi)樣(yang)。是迎接(jie)貴(gui)客(ke)之上品。仔(zi)細嚼(jiao)來,滿口(kou)生香(xiang),余(yu)味無窮。
普通稻谷用水浸透(tou)放入大鍋燜熟(shu),曬干(gan),脫殼,炒成胖米。加工(gong)程序(xu)與上(shang)同。
米(mi)(mi)(mi)花糕(gao)是南雄民間大眾化(hua)傳統食品,以前過年期間大街小巷好多制(zhi)作炒米(mi)(mi)(mi)糖的,現在做(zuo)的人兒也少了,基本上是機器制(zhi)作。過去,米(mi)(mi)(mi)花糕(gao)此三種(zhong)米(mi)(mi)(mi)米(mi)(mi)(mi)呈(cheng)在民間,可以說是貧富之象(xiang)征。較(jiao)富裕(yu)家庭(ting)必(bi)有(you)"米(mi)(mi)(mi)干米(mi)(mi)(mi)呈(cheng)"或(huo)(huo)"小米(mi)(mi)(mi)米(mi)(mi)(mi)呈(cheng)",而一般家庭(ting)或(huo)(huo)較(jiao)貧窮者也只能(neng)有(you)普米(mi)(mi)(mi)米(mi)(mi)(mi)呈(cheng)且數量相當有(you)限。
