主席宴(yan)是火(huo)宮(gong)(gong)殿總經(jing)理譚飛先生帶領全(quan)體火(huo)宮(gong)(gong)殿人,通(tong)過研(yan)究史料,走訪曾經(jing)為(wei)主席服務的(de)湘(xiang)菜(cai)(cai)大(da)(da)廚們,并反復研(yan)究,多次摸索最終成型。主席宴(yan)是以偉大(da)(da)領袖毛主席視察(cha)火(huo)宮(gong)(gong)殿時(shi)(shi)所品(pin)嘗的(de)火(huo)宮(gong)(gong)殿美(mei)食為(wei)基準,結合毛澤東(dong)青年時(shi)(shi)代在火(huo)宮(gong)(gong)殿吃過的(de)小吃,以及主席喜愛的(de)湘(xiang)菜(cai)(cai),組成一席。有六冷碟(die)、十(shi)大(da)(da)菜(cai)(cai)、兩隨菜(cai)(cai)、四點心,有的(de)清鮮淡雅,有的(de)色香味濃,都是原汁(zhi)原味的(de)湘(xiang)菜(cai)(cai)、湘(xiang)點,經(jing)火(huo)宮(gong)(gong)殿的(de)湘(xiang)菜(cai)(cai)大(da)(da)師(shi)們精烹細調,可讓您(nin)在一桌(zhuo)宴(yan)席中品(pin)味湖湘(xiang)飲(yin)食文化、感悟偉人情(qing)懷。
六(liu)味迎賓(bin):豆(dou)椒(jiao)蒸火焙魚(yu)、紅椒(jiao)腐乳、洋姜泡蒜、擂缽藠頭、臘八豆(dou)牛肉(rou)粒、油(you)辣白肉(rou)。
十大菜:紅燒肉(rou)、三(san)鮮菠菜、水魚裙爪(zhua)、酸辣羊肉(rou)、灰湯溫泉鴨(ya)、香辣百(bai)葉、軟蒸白(bai)鰱膽、煨牛蹄筋(jin)、東安仔雞(ji)、菌燴菜心。
兩隨菜:醬汁(zhi)筍絲(si)、蒜香(xiang)大片(pian)臘肉(rou)。
四(si)點心:油炸臭豆腐、蔥油粑粑、腦(nao)髓卷、雞絲米(mi)粉。
精美水果。
1958年4月12日,毛(mao)(mao)(mao)(mao)澤(ze)東主(zhu)(zhu)席(xi)(xi)在(zai)黃克(ke)誠將軍和時(shi)(shi)(shi)(shi)任湖南省(sheng)省(sheng)委書記周小舟的(de)陪同(tong)下(xia),神(shen)采(cai)奕奕地邁著健步來(lai)到(dao)火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)飲食店視察。時(shi)(shi)(shi)(shi)任火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)公方經理何炳(bing)炎(yan)把毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)迎接到(dao)二樓(lou)雅座(zuo)。在(zai)擺臺時(shi)(shi)(shi)(shi),毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)起(qi)身(shen)以一(yi)個(ge)普通勞動(dong)者的(de)身(shen)份同(tong)何炳(bing)炎(yan)一(yi)道鋪(pu)好(hao)桌布。然后,毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)問何:“火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)的(de)老人還在(zai)不在(zai)?生(sheng)活過得(de)好(hao)不好(hao)?長沙的(de)米(mi)多少(shao)錢一(yi)斤?”何炳(bing)炎(yan)向(xiang)主(zhu)(zhu)席(xi)(xi)一(yi)一(yi)作了匯(hui)報。在(zai)點(dian)菜(cai)(cai)時(shi)(shi)(shi)(shi),非常熟悉火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)的(de)毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)笑(xiao)著說:“吃點(dian)家常口味,來(lai)點(dian)臭豆腐(fu)(fu),東安仔雞……就(jiu)可(ke)以了。”廚房師傅聽說是給毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)炒(chao)菜(cai)(cai),個(ge)個(ge)心中又驚又喜,都想拿出(chu)看家本領來(lai),一(yi)定要把飯菜(cai)(cai)做得(de)合主(zhu)(zhu)席(xi)(xi)口味。當端上外焦內(nei)嫩(nen)的(de)臭豆腐(fu)(fu)時(shi)(shi)(shi)(shi),毛(mao)(mao)(mao)(mao)主(zhu)(zhu)席(xi)(xi)邊(bian)吃邊(bian)說:“火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)的(de)臭豆腐(fu)(fu),聞(wen)起(qi)來(lai)臭,吃起(qi)來(lai)香。”主(zhu)(zhu)席(xi)(xi)在(zai)火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)吃得(de)很(hen)高興。臨走時(shi)(shi)(shi)(shi)對何炳(bing)炎(yan)說:“火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)的(de)小吃、湘(xiang)菜(cai)(cai)很(hen)著名,你們(men)應該(gai)保持它的(de)特點(dian),火(huo)(huo)(huo)(huo)(huo)宮(gong)(gong)殿(dian)(dian)是廣大群眾喜愛來(lai)的(de)地方,你們(men)還要把它搞得(de)更好(hao)。”
