洪(hong)(hong)(hong)門雞(ji)蛋(dan)是江西撫州南(nan)城(cheng)(cheng)縣的(de)特產。據《南(nan)城(cheng)(cheng)縣志》記載,洪(hong)(hong)(hong)門雞(ji)蛋(dan)起(qi)源于(yu)(yu)宋代,興于(yu)(yu)明、清,盛于(yu)(yu)革命(ming)戰(zhan)爭時期(qi)。最早的(de)洪(hong)(hong)(hong)蛋(dan)制作(zuo)起(qi)源于(yu)(yu)民(min)間(jian)辦喜事時,為圖(tu)吉利將雞(ji)蛋(dan)用紅(hong)(hong)色(se)染紅(hong)(hong)蛋(dan)殼(故洪(hong)(hong)(hong)蛋(dan)又稱(cheng)紅(hong)(hong)蛋(dan))。至今南(nan)城(cheng)(cheng)民(min)間(jian)過生(sheng)日、結(jie)婚辦酒(jiu)席仍(reng)保留著吃洪(hong)(hong)(hong)蛋(dan)(紅(hong)(hong)蛋(dan))的(de)習(xi)俗(su)。洪(hong)(hong)(hong)蛋(dan)聞名于(yu)(yu)閩(min)、贛(gan)、粵等南(nan)方各地,至今還有(you)“建昌府內米滿倉(cang),彭家府第(di)蛋(dan)溢香”;“一雙紅(hong)(hong)蛋(dan)骨肉親,牽(qian)手再(zai)拜(bai)求(qiu)觀音”之(zhi)說。“登高山上(shang)一叼花(hua),花(hua)香飄(piao)到(dao)花(hua)樓(lou)(lou)下,情(qing)妹眼里說句話(hua),紅(hong)(hong)蛋(dan)敲破竹籬笆”( 一叼花(hua)系南(nan)城(cheng)(cheng)方言為一支花(hua)的(de)意思、登高山和(he)花(hua)樓(lou)(lou)下均為南(nan)城(cheng)(cheng)地名)。據正德《建昌府志》載“硝(xiao)石店鋪(pu)密布,多以洪(hong)(hong)(hong)蛋(dan)腌制”。
內在(zai)品質(zhi)(zhi):營養(yang)豐富(fu),蛋(dan)(dan)白質(zhi)(zhi)、氨基(ji)酸、卵(luan)磷脂、蛋(dan)(dan)黃素(su)(su)(su)、以及維(wei)生素(su)(su)(su)A、D、E、B族(zu)和鋅、鐵、鈣、碘、硒等(deng)微量(liang)元素(su)(su)(su)含量(liang)高(gao);蛋(dan)(dan)味醇(chun)香、無腥(xing)味、口感極嫩(nen)、且極易被吸收,與普(pu)通雞蛋(dan)(dan)相(xiang)比蛋(dan)(dan)白濃稠,蛋(dan)(dan)白質(zhi)(zhi)含量(liang)提高(gao)1.5%-2%,脂肪降低(di)3%,膽固(gu)醇(chun)降低(di)12.8%。獨特的蛋(dan)(dan)黃成(cheng)分:每100克蛋(dan)(dan)黃中含鐵150毫克、含維(wei)生素(su)(su)(su)A2000國(guo)際單位、維(wei)生素(su)(su)(su)B20.3毫克、維(wei)生素(su)(su)(su)D30國(guo)際單位、維(wei)生素(su)(su)(su)B10.25毫克。
外在特(te)征:蛋(dan)(dan)(dan)(dan)體(ti)較(jiao)小(xiao),每枚(mei)重45-50克;蛋(dan)(dan)(dan)(dan)殼質硬、呈淺(白)褐色(se)、光(guang)澤鮮亮;燈光(guang)-整(zheng)蛋(dan)(dan)(dan)(dan)呈橙紅色(se);打開后蛋(dan)(dan)(dan)(dan)黃凸起(qi)、完(wan)整(zheng)、有韌性;蛋(dan)(dan)(dan)(dan)白澄清、透明、稀稠分明、無異味。
地域范圍
洪門位(wei)于(yu)武夷山西翼地帶,為(wei)典型的丘陵低(di)山區。地勢大致(zhi)西南(nan)高(gao)東(dong)(dong)北(bei)低(di),并自東(dong)(dong)西兩側向(xiang)中(zhong)部傾斜,全縣較為(wei)洼平。洪門雞(ji)蛋地理標志(zhi)保(bao)護(hu)(hu)范(fan)圍為(wei)東(dong)(dong)經116°24′51″—116°57′41″,北(bei)緯27°18′00″—27°47′60″之間,具體地域范(fan)圍是:建昌鎮(zhen)(zhen)、萬坊鎮(zhen)(zhen)、洪門鎮(zhen)(zhen)、里塔鎮(zhen)(zhen)等4個鎮(zhen)(zhen)。保(bao)護(hu)(hu)規模110萬羽,年產(chan)量11000噸。

1、外(wai)在感官(guan)特征:洪門(men)雞蛋蛋殼質硬,呈淺(白)褐色,光澤鮮亮;燈光-時,整(zheng)個蛋呈橙紅色,蛋黃不見陰(yin)影(ying),打開后蛋黃凸起、完整(zheng),有韌性,蛋白澄(cheng)清、透明、稀(xi)稠(chou)分明,無異味。
