龍須(xu)酥被稱為中國民(min)間特色傳(chuan)統小吃,因外觀(guan)潔白綿密、細如龍須(xu)而(er)得(de)名。
龍(long)須酥由小麥(mai)精粉(fen)、麥(mai)芽(ya)糖(tang)等原料精制而成,具有色澤乳白、細絲萬縷、層次清晰、營(ying)養豐富、入(ru)口(kou)即松、回味甘(gan)甜(tian)等特點。
據說是(shi)古代皇(huang)帝(di)(di)吃(chi)的小食品,已流(liu)傳(chuan)民(min)間(jian)(jian)二千余年了。正(zheng)德皇(huang)帝(di)(di)游民(min)間(jian)(jian)時,發現民(min)間(jian)(jian)竟有味(wei)道、外形如此特(te)別(bie)之(zhi)糖(tang),當時稱之(zhi)為(wei)(wei)“銀絲(si)糖(tang)”,入(ru)口(kou)極香、口(kou)味(wei)特(te)別(bie),因而(er)對此物產生(sheng)好感,于是(shi)下旨帶回宮中(zhong),并取名(ming)為(wei)(wei)“龍(long)須(xu)(xu)糖(tang)”、也(ye)被(bei)稱為(wei)(wei)“龍(long)須(xu)(xu)卷”及后(hou)再傳(chuan)入(ru)民(min)間(jian)(jian),一直(zhi)是(shi)深受臣民(min)們喜愛的食品。龍(long)須(xu)(xu)酥(su)(su)據傳(chuan)已流(liu)傳(chuan)民(min)間(jian)(jian)二千年,一直(zhi)為(wei)(wei)皇(huang)帝(di)(di)御用點(dian)心(xin),直(zhi)至雍正(zheng)年間(jian)(jian),龍(long)須(xu)(xu)酥(su)(su)才名(ming)聲大(da)(da)震。相傳(chuan),一日雍正(zheng)皇(huang)帝(di)(di)設滿漢全(quan)席,宴請文武百官。當御廚現場(chang)制(zhi)作該酥(su)(su)時,雍正(zheng)皇(huang)帝(di)(di)見其手(shou)(shou)法嫻熟,似游龍(long)舞鳳(feng),手(shou)(shou)中(zhong)糖(tang)絲(si)雪白、纖細,如祥龍(long)之(zhi)須(xu)(xu),遂龍(long)顏大(da)(da)悅(yue),賞賜眾嬪妃臣子,并特(te)封此糖(tang)為(wei)(wei)“龍(long)須(xu)(xu)酥(su)(su)”,自此,龍(long)須(xu)(xu)酥(su)(su)的美名(ming)遍(bian)傳(chuan)大(da)(da)江南北。
