西鄉松花蛋產于陜南漢中市西鄉縣(xian),是獨具風(feng)味(wei)的(de)傳統名(ming)特產品。“松花變蛋”在西鄉縣(xian)眾多的(de)土特產中一直名(ming)列前茅,享有盛名(ming)。
西(xi)鄉縣(xian)松(song)花蛋(dan)(dan)的(de)特點(dian)是:蛋(dan)(dan)體離(li)殼,易(yi)取易(yi)剝,以手搖之,有顫動感;剝去蛋(dan)(dan)殼,晶(jing)瑩油潤(run),呈透明的(de)茶褐色,形(xing)似琥珀(po),具有彈性,表面滿布美麗的(de)晶(jing)狀松(song)枝花紋;蛋(dan)(dan)黃略(lve)帶溏(tang)心(xin),外(wai)圈墨晶(jing),內(nei)呈橘紅,油亮照(zhao)人,層次分明;咸淡適宜(yi),柔軟細(xi)膩,滑潤(run)爽口(kou),回味無窮。
西(xi)(xi)鄉(xiang)松(song)(song)(song)花(hua)(hua)(hua)(hua)(hua)蛋(dan),據記載(zai),源(yuan)于(yu)清(qing)乾隆年(nian)間(公元(yuan)1736—1795年(nian)),距今已有(you)(you)(you)200余年(nian)的歷(li)史。秦姓商(shang)人(ren)將腌制(zhi)皮(pi)(pi)蛋(dan)之(zhi)法(fa)傳(chuan)人(ren)西(xi)(xi)鄉(xiang)后(hou),最初(chu)有(you)(you)(you)私(si)人(ren)商(shang)號“天(tian)生法(fa)”、“天(tian)同心(xin)”和“蘭芝軒”等作(zuo)坊(fang)生產,制(zhi)作(zuo)。惟以(yi)“蘭芝軒”制(zhi)作(zuo)的松(song)(song)(song)花(hua)(hua)(hua)(hua)(hua)蛋(dan),質優味佳,受人(ren)歡迎。舊《西(xi)(xi)鄉(xiang)縣志》記載(zai):“松(song)(song)(song)花(hua)(hua)(hua)(hua)(hua)蛋(dan)又名皮(pi)(pi)蛋(dan),加松(song)(song)(song)枝灰(hui)制(zhi),若加竹葉、桃花(hua)(hua)(hua)(hua)(hua)灰(hui)亦可顯出松(song)(song)(song)花(hua)(hua)(hua)(hua)(hua),以(yi)溏心(xin)最有(you)(you)(you)名。行銷秦都、漢(han)口等地。售者裹以(yi)稻(dao)草,五枚(mei)一串(chuan),繁如連珠,攜帶甚(shen)便,商(shang)旅過縣者無不(bu)購之(zhi)”。這里(li)古(gu)時交通(tong)不(bu)便,農家鴨蛋(dan)多(duo)供(gong)自食,禽蛋(dan)旺(wang)季,無法(fa)貯存(cun)(cun),每(mei)于(yu)春、秋加工皮(pi)(pi)蛋(dan),旺(wang)為淡存(cun)(cun),終年(nian)享(xiang)用。并作(zuo)為商(shang)品遠近暢(chang)銷,久而(er)久之(zhi),形(xing)成漢(han)中特(te)產。
