西鄉松(song)花蛋產于陜南漢中(zhong)市西鄉縣,是獨具風(feng)味的傳(chuan)統(tong)名(ming)特(te)產品。“松(song)花變(bian)蛋”在西鄉縣眾(zhong)多(duo)的土特(te)產中(zhong)一直名(ming)列前茅,享(xiang)有盛名(ming)。
西鄉縣松花蛋的特點(dian)是:蛋體離殼,易取易剝,以手(shou)搖之,有(you)顫(zhan)動感;剝去(qu)蛋殼,晶(jing)瑩油潤,呈(cheng)透明(ming)的茶(cha)褐色,形(xing)似琥珀,具有(you)彈性,表面滿布美麗的晶(jing)狀松枝(zhi)花紋;蛋黃略帶溏心,外圈墨晶(jing),內呈(cheng)橘紅,油亮照人,層次(ci)分明(ming);咸淡適宜,柔(rou)軟(ruan)細膩(ni),滑潤爽口,回味(wei)無窮。
西(xi)(xi)鄉松(song)花蛋(dan)(dan),據記載,源于清(qing)乾隆年間(公元(yuan)1736—1795年),距今已有(you)200余年的歷史。秦姓商人(ren)將腌制(zhi)(zhi)皮蛋(dan)(dan)之(zhi)法(fa)(fa)傳人(ren)西(xi)(xi)鄉后,最初(chu)有(you)私人(ren)商號(hao)“天生(sheng)法(fa)(fa)”、“天同(tong)心(xin)(xin)”和“蘭芝軒(xuan)”等作坊(fang)生(sheng)產,制(zhi)(zhi)作。惟以(yi)“蘭芝軒(xuan)”制(zhi)(zhi)作的松(song)花蛋(dan)(dan),質優味佳,受(shou)人(ren)歡迎。舊《西(xi)(xi)鄉縣(xian)志》記載:“松(song)花蛋(dan)(dan)又名皮蛋(dan)(dan),加松(song)枝灰制(zhi)(zhi),若加竹葉(xie)、桃花灰亦可(ke)顯出松(song)花,以(yi)溏心(xin)(xin)最有(you)名。行銷秦都、漢(han)口等地。售者裹以(yi)稻草,五枚一串,繁如連珠,攜(xie)帶(dai)甚便(bian),商旅(lv)過縣(xian)者無不購之(zhi)”。這里古時交通不便(bian),農(nong)家鴨蛋(dan)(dan)多供(gong)自(zi)食(shi),禽蛋(dan)(dan)旺季,無法(fa)(fa)貯存,每于春、秋加工皮蛋(dan)(dan),旺為(wei)淡存,終(zhong)年享(xiang)用(yong)。并作為(wei)商品遠近(jin)暢(chang)銷,久而久之(zhi),形(xing)成漢(han)中特(te)產。
