這個也和蜂(feng)(feng)蜜(mi)的(de)(de)(de)(de)結(jie)(jie)(jie)晶(jing)(jing)(jing)過程有關系，因(yin)為(wei)蜂(feng)(feng)蜜(mi)本身結(jie)(jie)(jie)晶(jing)(jing)(jing)的(de)(de)(de)(de)時(shi)(shi)(shi)候(hou)非常緩(huan)慢(man)(man)，有時(shi)(shi)(shi)候(hou)長達(da)數月之久，所以(yi)結(jie)(jie)(jie)晶(jing)(jing)(jing)核融(rong)化(hua)(hua)的(de)(de)(de)(de)時(shi)(shi)(shi)候(hou)也非常緩(huan)慢(man)(man)，就算(suan)(suan)到了夏季室溫高達(da)35度(du)以(yi)上，都只會由上開始(shi)慢(man)(man)慢(man)(man)融(rong)化(hua)(hua)，而不會在短(duan)時(shi)(shi)(shi)間內變成液(ye)體。除非直接(jie)(jie)用高溫的(de)(de)(de)(de)水隔瓶直接(jie)(jie)長時(shi)(shi)(shi)間浸泡(pao)才會慢(man)(man)慢(man)(man)融(rong)化(hua)(hua)。而且就算(suan)(suan)結(jie)(jie)(jie)晶(jing)(jing)(jing)的(de)(de)(de)(de)蜂(feng)(feng)蜜(mi)再(zai)變回(hui)液(ye)體以(yi)后，色(se)澤(ze)也無法恢(hui)(hui)復到原(yuan)來(lai)液(ye)態時(shi)(shi)(shi)候(hou)的(de)(de)(de)(de)色(se)澤(ze)了，一樣是(shi)結(jie)(jie)(jie)晶(jing)(jing)(jing)時(shi)(shi)(shi)的(de)(de)(de)(de)乳白色(se)澤(ze)，或者(zhe)是(shi)比原(yuan)來(lai)液(ye)態時(shi)(shi)(shi)候(hou)色(se)澤(ze)更偏淡些。這是(shi)因(yin)為(wei)結(jie)(jie)(jie)晶(jing)(jing)(jing)核在高溫狀態下被溶解，破壞了結(jie)(jie)(jie)晶(jing)(jing)(jing)核結(jie)(jie)(jie)構(gou)，無法再(zai)恢(hui)(hui)復回(hui)原(yuan)來(lai)的(de)(de)(de)(de)液(ye)態狀態，只能(neng)保持在液(ye)態和結(jie)(jie)(jie)晶(jing)(jing)(jing)狀態之間的(de)(de)(de)(de)形(xing)態下。

當然，無論是(shi)液(ye)態狀、結晶(jing)狀，其實(shi)蜂蜜的(de)成分(fen)本質是(shi)不變(bian)的(de)，只是(shi)外觀發生(sheng)了變(bian)化，是(shi)沒有區別的(de)。
