以前天津人探親訪友的時候(hou)要(yao)攜帶禮(li)物(wu),講究送(song)"八件"。
傳統的八件包(bao)括福字(zi)餅、祿字(zi)餅、壽字(zi)餅、喜字(zi)餅、如意(yi)、棗(zao)花、聚(ju)寶盆、蝦酥,采用山楂、玫瑰(gui)、青梅、白糖、豆沙、棗(zao)泥、椒鹽、葡萄干等八種餡心(xin),外裹(guo)以含食油的面,放在各種圖(tu)案的印模里精心(xin)烤制而成。
"八件"其中又有大八件兒和(he)小(xiao)(xiao)(xiao)八件兒之分。大八件兒包括棗花(hua)、福字(zi)、祿字(zi)、壽(shou)字(zi)、喜(xi)字(zi)、卷酥、核(he)桃酥、蠟餅;八小(xiao)(xiao)(xiao)件包括棗方子(zi)、杏(xing)仁酥、小(xiao)(xiao)(xiao)柿子(zi)、小(xiao)(xiao)(xiao)桃、小(xiao)(xiao)(xiao)杏(xing)、小(xiao)(xiao)(xiao)石榴(liu)、小(xiao)(xiao)(xiao)蘋果、小(xiao)(xiao)(xiao)核(he)桃。
隨著時(shi)代的發展,“八件”也在不斷(duan)推陳(chen)出新(xin),一些(xie)新(xin)品種也加入到“八件”的行列中,且分類更(geng)為(wei)細致。
1、制作原(yuan)料不(bu)同(tong):京八(ba)件(jian)以棗(zao)泥、青梅、葡萄(tao)干、玫瑰、豆沙、白(bai)糖、香(xiang)蕉(jiao)、椒鹽等八(ba)種原(yuan)料為餡(xian),用豬油(you)、水和面做皮,以皮包餡(xian),烘烤(kao)而成;津八(ba)件(jian)采用山楂、玫瑰、青梅、白(bai)糖、豆沙、棗(zao)泥、椒鹽、葡萄(tao)干等八(ba)種餡(xian)心,外裹以含(han)食油(you)的(de)面,放在(zai)各(ge)種圖案的(de)印模里(li)精(jing)心烤(kao)制而成。
