粽(zong)(zong)(zong)子糖(tang)是(shi)江蘇(su)省蘇(su)州市特產,地(di)(di)方傳(chuan)統名點。琥珀(po)色的(de)麥芽糖(tang)汁凝成一(yi)顆小小的(de)四角粽(zong)(zong)(zong),晶(jing)瑩剔(ti)透,似有(you)一(yi)絲淡(dan)淡(dan)的(de)粽(zong)(zong)(zong)香入鼻。粽(zong)(zong)(zong)子糖(tang)堅硬透明(ming),有(you)光澤,可以清(qing)晰地(di)(di)看(kan)見玫瑰(gui)花、松子仁(ren)均勻地(di)(di)散布在糖(tang)體內(nei),猶如美麗(li)的(de)水(shui)晶(jing)石(shi),食之甘潤,芬芳可口,有(you)松仁(ren)和玫瑰(gui)的(de)清(qing)香味道。
松(song)(song)仁(ren)粽(zong)(zong)子(zi)糖是以白砂糖、飴糖及松(song)(song)仁(ren)為主要原料,經過溶糖、過篩、熬糖、冷(leng)卻、折疊、拉條、剪糖等多個步(bu)驟加工而成(cheng)(cheng)的。松(song)(song)仁(ren)粽(zong)(zong)子(zi)糖做好(hao)后,師(shi)傅用剪刀將(jiang)圓(yuan)條狀的軟糖剪成(cheng)(cheng)段,每剪一次就轉動一次,從而形(xing)成(cheng)(cheng)粽(zong)(zong)子(zi)的形(xing)狀。
趁熱吃(chi)了一(yi)顆(ke),香(xiang)軟得如同(tong)松(song)(song)子軟糖一(yi)般,略(lve)有點黏牙,滿囗(wei)扎扎實實的松(song)(song)仁(ren)香(xiang)。當然這可(ke)不是粽子糖正確(que)的打開方式(shi),畢竟粽子糖還是得吃(chi)那一(yi)口松(song)(song)脆的口感。待放涼了一(yi)會(hui)兒(er),那感覺就到位(wei)了,松(song)(song)松(song)(song)脆脆,滿口生香(xiang),可(ke)以不停地吃(chi)上好幾(ji)顆(ke)。
最有名(ming)的松(song)仁粽(zong)子(zi)糖(tang)(tang)當屬采芝(zhi)(zhi)(zhi)齋(zhai),清同治九年(nian)(1870年(nian)),采芝(zhi)(zhi)(zhi)齋(zhai)創(chuang)始人金(jin)蔭芝(zhi)(zhi)(zhi)在(zai)蘇州觀前街擺攤,現做現賣(mai)一文(wen)錢兩只(zhi)的粽(zong)子(zi)糖(tang)(tang),因其味道(dao)獨特,做工也細,漸漸聲名(ming)遠播。金(jin)蔭芝(zhi)(zhi)(zhi)父子(zi)乘勢(shi)擴張,增加(jia)糖(tang)(tang)果品種,又新增了炒貨、蜜餞,每樣產(chan)品都(dou)力求與(yu)眾不同。14年(nian)后(hou),便創(chuang)下(xia)了采芝(zhi)(zhi)(zhi)齋(zhai)這塊金(jin)字招牌。
2007年(nian),采(cai)芝齋蘇(su)式糖果(guo)制作技藝被(bei)列入蘇(su)州(zhou)市非(fei)物(wu)質文(wen)化遺產名錄。2009年(nian),被(bei)列入江蘇(su)省級非(fei)物(wu)質文(wen)化遺產名錄。
松(song)(song)仁粽子(zi)糖(tang)是由松(song)(song)仁和麥芽(ya)糖(tang)所(suo)制作而成(cheng),不僅(jin)味(wei)道(dao)香(xiang)甜美(mei)味(wei),更(geng)加上松(song)(song)仁的香(xiang)味(wei),味(wei)道(dao)可(ke)(ke)口,而且松(song)(song)仁其中富含多種營養元素,經常食用松(song)(song)仁可(ke)(ke)以(yi)達到美(mei)容養顏(yan)的功效(xiao),對保持(chi)身材也有很大的好處(chu),還可(ke)(ke)以(yi)改(gai)善皮膚粗糙等(deng)。
