流(liu)行(xing)于(yu)寶坻的“卷餡兒肉(rou)(rou)餅(bing)(bing)”,是(shi)(shi)一(yi)種(zhong)(zhong)地(di)道的傳(chuan)統(tong)名(ming)吃。據傳(chuan),這種(zhong)(zhong)名(ming)吃早在清(qing)朝乾隆年(nian)間(jian)(jian)就已盛(sheng)行(xing)。到上世(shi)紀二三十(shi)年(nian)代,寶坻城(cheng)區李全德和(he)趙禿(tu)子分(fen)別營(ying)售的卷餡兒肉(rou)(rou)餅(bing)(bing),技藝最(zui)(zui)精(jing)、食味(wei)(wei)(wei)最(zui)(zui)佳、名(ming)氣(qi)最(zui)(zui)大,堪(kan)稱“京東美食一(yi)絕”。他們從選料到配料,都很講究,豬(zhu)肉(rou)(rou)只(zhi)用(yong)“前槽(cao)”部位,每(mei)市斤(jin)“前槽(cao)肉(rou)(rou)”要配小(xiao)磨香油一(yi)兩(liang)半(ban)(舊秤(cheng)制16兩(liang)為1市斤(jin)),蔥、姜、花椒水、五香面等佐料一(yi)應俱全,加工更是(shi)(shi)精(jing)細和(he)講究,每(mei)市斤(jin)面粉和(he)每(mei)市斤(jin)豬(zhu)肉(rou)(rou)只(zhi)做四張肉(rou)(rou)餅(bing)(bing),每(mei)張肉(rou)(rou)餅(bing)(bing)上下分(fen)八層(ceng),先炸后(hou)烙(luo),層(ceng)次分(fen)明,外焦里(li)嫩,香味(wei)(wei)(wei)撲鼻,吃時如果再佐之以寶坻大蒜(suan)和(he)老陳醋,真可謂“人間(jian)(jian)美食”了。這種(zhong)(zhong)名(ming)吃一(yi)直流(liu)傳(chuan)下來,其風味(wei)(wei)(wei)和(he)名(ming)氣(qi)完全可與(yu)寶坻相鄰的河(he)(he)北省香河(he)(he)縣的特色風味(wei)(wei)(wei)名(ming)吃“香河(he)(he)肉(rou)(rou)餅(bing)(bing)”相媲美。
