二、蓮蓉月餅是甜的還是咸的
蓮(lian)蓉(rong)(rong)月(yue)(yue)餅原產于廣東(dong),極具粵式特色。蓮(lian)蓉(rong)(rong)是(shi)一種由蓮(lian)子肉制(zhi)成的糯米(mi)糍餡(xian)料(liao),口(kou)(kou)感(gan)細(xi)膩柔軟,略(lve)帶甜(tian)(tian)味,不油膩,十分適(shi)(shi)合作(zuo)為月(yue)(yue)餅餡(xian)料(liao)。選用優質的蓮(lian)蓉(rong)(rong),加入適(shi)(shi)量(liang)的糯米(mi),制(zhi)成的蓮(lian)蓉(rong)(rong)月(yue)(yue)餅皮酥松、餡(xian)甜(tian)(tian)美(mei),食之香甜(tian)(tian)可(ke)口(kou)(kou),讓人欲(yu)罷不能。
三、蓮蓉月餅的蓮蓉是什么東西

五、蓮蓉月餅怎么做
食材(cai):轉化(hua)糖(tang)漿(jiang)140克(ke)、花生油30克(ke)、枧水4克(ke)、普通面粉200克(ke)。
步驟:
1、轉(zhuan)化糖(tang)漿、花(hua)生油,枧水等(deng)量加入后攪(jiao)拌均勻。
2、加入(ru)過篩后的普(pu)通面粉混合成團,蓋上保(bao)鮮膜,放冰箱冷藏一小時再(zai)使用。
3、這里(li)做了(le)75克的(de)月(yue)餅(bing),使(shi)用皮(pi)21克,蓮蓉54克。取一個餅(bing)皮(pi)面團,在(zai)手掌(zhang)上(shang)壓扁。(餅(bing)皮(pi)面團比較粘(zhan),要在(zai)手掌(zhang)上(shang)拍點面粉(fen)防粘(zhan))把蓮蓉餡放在(zai)面團中間。
4、用兩只(zhi)手把餅(bing)皮慢(man)慢(man)往上(shang)推,包(bao)裹住蓮(lian)蓉。繼續往上(shang)推,直到(dao)把蓮(lian)蓉完全包(bao)住。注(zhu)意力度,要盡量讓餅(bing)皮厚薄均勻,不要露餡。
5、在圓球上拍一點面(mian)粉,方便一會(hui)兒脫模(mo)。把圓球面(mian)團放(fang)進(jin)月餅(bing)模(mo)子。
6、餅模直接按在(zai)烤盤上,壓(ya)出月(yue)餅花(hua)紋(wen)(烤盤上不要涂油)。
7、在月(yue)餅表面噴點水,放進預熱(re)好(hao)200度的(de)烤(kao)(kao)箱烤(kao)(kao)焙(bei)。烤(kao)(kao)7分鐘左右,等(deng)月(yue)餅花紋(wen)定型后(hou),取出來在表面刷(shua)上(shang)(shang)蛋黃水,再放進烤(kao)(kao)箱,烤(kao)(kao)到周圍(wei)呈腰鼓形,餅皮均勻(yun)上(shang)(shang)色以(yi)后(hou)就可以(yi)了。一共(gong)大(da)約需要烤(kao)(kao)20分鐘。
8、剛剛烤出來的(de)(de)蓮蓉月餅(bing),餅(bing)皮(pi)是非常干硬(ying)的(de)(de)。冷卻后,密封放置一(yi)段(duan)時間,餅(bing)皮(pi)會(hui)漸漸變(bian)得(de)柔(rou)軟(ruan),表面(mian)也會(hui)產生一(yi)層油(you)潤的(de)(de)光澤,這個過程(cheng)叫“回油(you)”。餅(bing)皮(pi)的(de)(de)回油(you),和餅(bing)皮(pi)配方(fang)、轉化糖漿的(de)(de)配方(fang)還有餡料的(de)(de)種類都(dou)有關系。根據(ju)月餅(bing)的(de)(de)制作情況,回油(you)的(de)(de)時間也不(bu)一(yi)樣,有的(de)(de)可能需要(yao)三(san)五天,有的(de)(de)甚(shen)至(zhi)可能需要(yao)一(yi)個星期。如果月餅(bing)遲遲不(bu)回油(you),就表示制作出現(xian)了問題。
六、蓮蓉月餅餡料的做法
蓮(lian)蓉月餅餡(xian)的用料(liao)十分講(jiang)究,要選(xuan)用當年產的蓮(lian)子,制(zhi)出的餡(xian)料(liao)色(se)澤金黃,幼滑清(qing)香,月餅形狀(zhuang)豐(feng)美、鮮腴(yu)。下面介紹蓮(lian)蓉月餅餡(xian)料(liao)的做法。
制作(zuo)配料(liao):去芯蓮(lian)子250克、清水(shui)800ML、白糖60克、麥芽(ya)糖80克、玉米油100克。
制作方法:
1、準備250克的(de)去芯蓮(lian)子,清水浸泡3個小(xiao)時。
2、泡好的(de)蓮子變得(de)很飽滿,也(ye)特別的(de)軟,然后拿去清洗幾(ji)遍。
3、然后把蓮子(zi)(zi)放在高壓鍋里,加入800ML左右的(de)(de)清水,能(neng)沒(mei)過蓮子(zi)(zi)即可(ke),燜(men)30分鐘(zhong)左右即可(ke)。煮好(hao)的(de)(de)蓮子(zi)(zi)用(yong)手(shou)一捻就碎。沒(mei)有高壓鍋的(de)(de)話用(yong)普通的(de)(de)鍋煮也是可(ke)以的(de)(de)。
4、煮(zhu)好(hao)的蓮(lian)子放在料理杯里,打成細膩的糊(hu)狀,如果攪拌機(ji)攪不(bu)動可(ke)以適當(dang)加點蓮(lian)子湯,能夠讓攪拌機(ji)啟動就可(ke)以,不(bu)需要加很多水(shui)。
5、然后倒在平底鍋不粘鍋里,翻炒至(zhi)稍微(wei)黏稠的狀(zhuang)態,加入白糖(tang)和麥芽糖(tang)翻炒。
6、開中小火不(bu)停的翻(fan)炒(chao),直到變得(de)可(ke)以(yi)抱團(tuan)(tuan)但是粘鍋鏟的情況(kuang),分次加入(ru)玉(yu)米油翻(fan)炒(chao)至(zhi)完全吸收(shou)。最后可(ke)以(yi)抱團(tuan)(tuan),不(bu)粘鍋鏟就可(ke)以(yi)了。
