二、蓮蓉月餅是甜的還是咸的
蓮(lian)蓉(rong)(rong)月餅(bing)原產于廣東,極(ji)具粵(yue)式特色(se)。蓮(lian)蓉(rong)(rong)是一種由蓮(lian)子肉制成(cheng)的(de)糯(nuo)米糍餡(xian)料(liao),口(kou)感細膩(ni)柔軟(ruan),略帶甜味,不(bu)油膩(ni),十分適合作為月餅(bing)餡(xian)料(liao)。選(xuan)用優質的(de)蓮(lian)蓉(rong)(rong),加(jia)入適量的(de)糯(nuo)米,制成(cheng)的(de)蓮(lian)蓉(rong)(rong)月餅(bing)皮酥(su)松、餡(xian)甜美,食(shi)之香(xiang)甜可口(kou),讓人欲罷不(bu)能。

五、蓮蓉月餅怎么做
食(shi)材:轉化糖漿140克(ke)、花生油30克(ke)、枧水4克(ke)、普通(tong)面粉200克(ke)。
步驟:
1、轉化糖漿、花(hua)生油(you),枧水等量加入后攪拌均勻。
2、加(jia)入過篩后的(de)普通面粉混(hun)合(he)成(cheng)團,蓋上保鮮膜,放冰箱冷藏一小時再使用。
3、這里做了(le)75克(ke)(ke)的月餅,使用皮21克(ke)(ke),蓮蓉(rong)54克(ke)(ke)。取一個餅皮面(mian)團(tuan),在(zai)手掌上壓(ya)扁。(餅皮面(mian)團(tuan)比較(jiao)粘,要在(zai)手掌上拍點面(mian)粉防粘)把(ba)蓮蓉(rong)餡(xian)放在(zai)面(mian)團(tuan)中間。
4、用兩只手把(ba)餅(bing)皮慢(man)慢(man)往(wang)上推,包裹住蓮蓉。繼續往(wang)上推,直(zhi)到(dao)把(ba)蓮蓉完(wan)全包住。注意(yi)力度,要(yao)盡(jin)量讓餅(bing)皮厚薄均勻,不要(yao)露餡。
5、在圓球(qiu)上拍一(yi)點面粉,方便一(yi)會兒脫模。把圓球(qiu)面團放進(jin)月餅模子。
6、餅模直接按在烤盤上(shang),壓出月餅花(hua)紋(烤盤上(shang)不要涂油)。
7、在月(yue)餅(bing)表(biao)面噴(pen)點(dian)水(shui),放進預熱好200度的烤(kao)箱(xiang)烤(kao)焙。烤(kao)7分鐘左右,等月(yue)餅(bing)花紋定型后,取出來在表(biao)面刷上蛋黃(huang)水(shui),再放進烤(kao)箱(xiang),烤(kao)到周圍呈腰鼓形,餅(bing)皮(pi)均勻(yun)上色以(yi)后就可以(yi)了。一共大約(yue)需要烤(kao)20分鐘。
8、剛(gang)剛(gang)烤出來的(de)(de)(de)(de)蓮(lian)蓉月(yue)餅,餅皮(pi)(pi)是非常干硬的(de)(de)(de)(de)。冷卻后,密封放置一(yi)(yi)段時間(jian),餅皮(pi)(pi)會漸漸變得柔軟,表面也會產生一(yi)(yi)層油(you)潤的(de)(de)(de)(de)光澤,這個過(guo)程(cheng)叫“回(hui)油(you)”。餅皮(pi)(pi)的(de)(de)(de)(de)回(hui)油(you),和餅皮(pi)(pi)配方(fang)、轉化糖漿的(de)(de)(de)(de)配方(fang)還有餡料的(de)(de)(de)(de)種類都有關系。根據月(yue)餅的(de)(de)(de)(de)制(zhi)作情況,回(hui)油(you)的(de)(de)(de)(de)時間(jian)也不一(yi)(yi)樣,有的(de)(de)(de)(de)可能(neng)需要三(san)五天,有的(de)(de)(de)(de)甚至可能(neng)需要一(yi)(yi)個星期。如果(guo)月(yue)餅遲遲不回(hui)油(you),就表示制(zhi)作出現了問題。
六、蓮蓉月餅餡料的做法
蓮(lian)蓉月餅(bing)(bing)餡(xian)的用料十分講究,要選用當年產的蓮(lian)子(zi),制出的餡(xian)料色(se)澤金黃,幼滑清香(xiang),月餅(bing)(bing)形狀豐美(mei)、鮮腴(yu)。下面(mian)介紹蓮(lian)蓉月餅(bing)(bing)餡(xian)料的做法。
制作配料:去芯蓮子250克、清水(shui)800ML、白糖(tang)60克、麥(mai)芽糖(tang)80克、玉(yu)米油100克。
制作方法:
1、準備250克(ke)的(de)去芯蓮子,清水浸泡3個小時(shi)。
2、泡好的蓮子變得很飽滿(man),也特別(bie)的軟,然后拿去(qu)清洗(xi)幾(ji)遍。
3、然后把蓮子放在高壓鍋里,加入(ru)800ML左右(you)的清(qing)水(shui),能沒(mei)過(guo)蓮子即(ji)可(ke),燜30分鐘左右(you)即(ji)可(ke)。煮好(hao)的蓮子用(yong)手一捻就碎。沒(mei)有(you)高壓鍋的話用(yong)普通的鍋煮也是(shi)可(ke)以(yi)的。
4、煮好的蓮(lian)子(zi)放在(zai)料(liao)理杯里(li),打成細膩的糊狀,如果攪(jiao)拌(ban)機攪(jiao)不動可以適當加點蓮(lian)子(zi)湯(tang),能夠讓攪(jiao)拌(ban)機啟動就可以,不需要(yao)加很多水(shui)。
5、然后倒在(zai)平底鍋不粘鍋里,翻炒(chao)至稍微黏稠的狀態,加入白糖和(he)麥(mai)芽(ya)糖翻炒(chao)。
6、開中小火不停的翻(fan)炒(chao),直到變得(de)可(ke)以抱團(tuan)但是粘鍋(guo)鏟(chan)的情況,分(fen)次加入玉米(mi)油翻(fan)炒(chao)至完(wan)全吸(xi)收。最后可(ke)以抱團(tuan),不粘鍋(guo)鏟(chan)就可(ke)以了。
7、這樣我們(men)的蓮蓉月餅的餡(xian)料就做好(hao)了,綿軟(ruan)細膩,入口即(ji)化,自己做的少(shao)油少(shao)糖,好(hao)吃(chi)不(bu)甜膩,而且(qie)越吃(chi)越香,更沒有防腐(fu)劑,配方中的油和糖已經(jing)減少(shao)至(zhi)最低了,不(bu)建議(yi)再減量,這樣影(ying)響口感成品。
