蓮子,是睡蓮(lian)科水(shui)生(sheng)草本植(zhi)物蓮(lian)的種子。又稱蓮(lian)實、蓮(lian)米(mi)、蓮(lian)肉,具有補脾止瀉,止帶,益腎澀精,養心安神之功效,常用于脾虛泄瀉,帶下,遺精,心悸失眠。蓮(lian)(lian)子以湘蓮(lian)(lian)為優,湘蓮(lian)(lian)歷來作(zuo)為進(jin)貢(gong)(gong)朝(chao)廷的珍品,故又稱“貢(gong)(gong)蓮(lian)(lian)”。蓮(lian)(lian)子包括紅蓮(lian)子(zi)(zi)、白(bai)(bai)蓮(lian)子(zi)(zi)、石蓮(lian)子(zi)(zi)三種(zhong)(zhong)。石蓮(lian)子(zi)(zi)是指(zhi)成熟甚至陷于(yu)淤泥(ni)的(de)(de)(de)蓮(lian)蓬剝下來或自然掉下來的(de)(de)(de)帶黑(hei)色外(wai)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)子(zi)(zi)。紅蓮(lian)子(zi)(zi)是指(zhi)除去(qu)外(wai)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)子(zi)(zi),一般(ban)分為去(qu)芯(xin)和不去(qu)芯(xin)兩(liang)(liang)種(zhong)(zhong),白(bai)(bai)蓮(lian)子(zi)(zi)是指(zhi)去(qu)掉內(nei)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)子(zi)(zi),也分去(qu)芯(xin)不去(qu)芯(xin)兩(liang)(liang)種(zhong)(zhong)。幾種(zhong)(zhong)蓮(lian)子(zi)(zi)功效(xiao)基本相(xiang)同但(dan)使用(yong)上略有區(qu)別:紅蓮(lian)子(zi)(zi)帶紅色外(wai)皮(pi)(pi),一般(ban)用(yong)于(yu)養心安神的(de)(de)(de)比較多(duo),白(bai)(bai)蓮(lian)子(zi)(zi)色白(bai)(bai),一般(ban)用(yong)于(yu)潤(run)肺健脾的(de)(de)(de)多(duo)。
蓮(lian)子(zi)的質(zhi)量以湘蓮(lian)品質(zhi)最好。其皮(pi)(pi)(pi)色淡紅,皮(pi)(pi)(pi)紋細致,粒(li)大飽滿,生(sheng)吃(chi)微甜,一(yi)煮(zhu)就(jiu)酥,食之軟(ruan)糯清香。紅蓮(lian)質(zhi)量較差(cha),其粒(li)形瘦長,皮(pi)(pi)(pi)色暗(an)花,臍(qi)部下陷,中(zhong)心空間較大,生(sheng)吃(chi)味淡,久煮(zhu)不酥。有(you)(you)的蓮(lian)子(zi)看起(qi)來(lai)又白又干(gan)凈,實(shi)際這(zhe)種蓮(lian)子(zi)很有(you)(you)可(ke)能使用了對(dui)人體有(you)(you)害(hai)的化學漂白劑(ji),而且這(zhe)些物(wu)質(zhi)會對(dui)肝臟造成傷害(hai),引起(qi)重金屬中(zhong)毒。真(zhen)正優質(zhi)的蓮(lian)子(zi),去皮(pi)(pi)(pi)后外(wai)表仍(reng)會有(you)(you)一(yi)點皺皮(pi)(pi)(pi)或(huo)未處(chu)理干凈的(de)(de)紅皮,劣質(zhi)的(de)(de)則在刀口(kou)處(chu)有突起。蓮子(zi)經水(shui)蒸會(hui)發(fa)生膨(peng)脹,散發(fa)出(chu)一種(zhong)清香(xiang),而添加(jia)了化學(xue)制劑(ji)的(de)(de)蓮子(zi)幾(ji)乎不膨(peng)脹,還會(hui)有一種(zhong)堿味(wei)。
