小(xiao)米煎餅是(shi)(shi)山西省(sheng)晉城陽(yang)城的(de)(de)特色美食。清(qing)晨,走在陽(yang)城的(de)(de)大街上,只見(jian)小(xiao)吃(chi)店前,人頭攢動(dong),一(yi)個個顧客用盤子端著金黃色的(de)(de)圓餅狀食物(wu)吃(chi)得津(jin)津(jin)有味,這種食物(wu)就是(shi)(shi)陽(yang)城的(de)(de)傳統名牌小(xiao)吃(chi)——小(xiao)米煎餅。其(qi)氣香味醇,松軟適(shi)口,配(pei)以當地(di)的(de)(de)小(xiao)米粥稀飯(fan)或雜格(ge),味則更佳;又因(yin)營(ying)養價(jia)值豐富,成為(wei)當地(di)人早餐的(de)(de)首選之食。
制做煎(jian)餅的(de)(de)第一步(bu)關鍵是(shi)(shi)“發”。將(jiang)(jiang)小(xiao)米用水泡軟(ruan)后磨成粥,放在(zai)(zai)適度的(de)(de)溫(wen)度下“發”六(liu)到八(ba)個(ge)(ge)(ge)小(xiao)時,至虛軟(ruan)為(wei)止。第二步(bu)才(cai)是(shi)(shi)煎(jian),當地(di)人俗(su)稱為(wei)“攤(tan)”。攤(tan)煎(jian)餅前,要(yao)先將(jiang)(jiang)鏊(ao)加熱。煎(jian)餅鏊(ao)是(shi)(shi)一套陽城獨有的(de)(de)特殊煎(jian)制工具,圓(yuan)形,中間(jian)凸起,需配備兩(liang)個(ge)(ge)(ge)蓋子,一個(ge)(ge)(ge)蓋在(zai)(zai)鏊(ao)上(shang),一個(ge)(ge)(ge)座(zuo)在(zai)(zai)半(ban)火上(shang)。發好的(de)(de)粥舀入(ru)鏊(ao)內(nei),隨著(zhu)“哧……”的(de)(de)一聲,立即(ji)蓋上(shang)蓋子,接(jie)著(zhu)兩(liang)個(ge)(ge)(ge)蓋子要(yao)不時替(ti)換,這樣鏊(ao)內(nei)的(de)(de)煎(jian)餅才(cai)能(neng)均勻受熱。約5分(fen)鐘(zhong)香氣(qi)飄出,煎(jian)餅也就熟了。
當地人還有一種習慣,煎(jian)餅(bing)快熟時,在上面或打入雞(ji)蛋,或撒上蔥花,或放些(xie)紅(hong)糖,于是衍生出三種煎(jian)餅(bing):雞(ji)蛋煎(jian)餅(bing)、蔥花煎(jian)餅(bing)、紅(hong)糖煎(jian)餅(bing)。也許,不(bu)遠的(de)將來(lai),智(zhi)慧(hui)的(de)陽城人會向(xiang)全世界推出小(xiao)米(mi)煎(jian)餅(bing)的(de)系列產(chan)品(pin):有奶味的(de),有果味的(de),還有巧克力味的(de)。
