3、蓮蓉月餅的做法
食材
主料:面粉200g、轉化糖漿140g、植物油45ml
輔料(liao):蓮蓉餡500g、枧(jian)水適量、蛋(dan)黃1個(ge)、蛋(dan)清5g、水(shui)適(shi)量
廣式蓮蓉月餅的做法步驟
1.轉化糖漿(jiang)、油、枧(jian)水拌勻,倒入面粉(fen)中和成面團,餳1-2小時。
2..分割成10個劑子。
3..制成圓形狀(zhuang)。
4.蓮蓉(rong)餡分成10份,團成圓形。
5.取一個(ge)劑(ji)子,按(an)扁放(fang)入蓮(lian)蓉餡。 用手虎口慢慢向上推,最(zui)后把口收(shou)嚴(yan)實,用月餅模子按(an)壓成型。
6.做出來的月(yue)餅坯子。
7.烤箱180度預熱,先(xian)烤5分(fen)鐘,取(qu)出來刷蛋黃液。
8.用160度再烤20分鐘,取出來(lai)晾涼。
9.切開一(yi)個,看(kan)里(li)邊(bian)的餡料夠(gou)足(zu)吧。
