3、蓮蓉月餅的做法
食材
主料:面粉(fen)200g、轉化糖漿(jiang)140g、植物油(you)45ml
輔料(liao):蓮(lian)蓉餡500g、枧水適量(liang)、蛋黃1個(ge)、蛋(dan)清5g、水適量
廣式蓮蓉月餅的做法步驟
1.轉化(hua)糖(tang)漿、油、枧水拌勻,倒入面粉中和成面團(tuan),餳(xing)1-2小時。
2..分割成10個劑子。
3..制成圓(yuan)形狀。
4.蓮蓉餡分(fen)成(cheng)10份,團成(cheng)圓形(xing)。
5.取一個劑(ji)子(zi),按(an)扁放入蓮蓉餡。 用手虎口慢(man)慢(man)向上推(tui),最(zui)后把口收(shou)嚴(yan)實,用月(yue)餅模子(zi)按(an)壓成型(xing)。
6.做出來的月餅坯子(zi)。
7.烤箱(xiang)180度(du)預熱,先(xian)烤5分鐘,取(qu)出來(lai)刷蛋黃液(ye)。
8.用160度再烤(kao)20分鐘,取出(chu)來(lai)晾涼。
9.切開一(yi)個,看里邊(bian)的餡(xian)料夠足吧。
