3、蓮蓉月餅的做法
食材
主料:面粉200g、轉化糖漿140g、植(zhi)物(wu)油45ml
輔(fu)料:蓮(lian)蓉餡500g、枧(jian)水適量(liang)、蛋(dan)黃(huang)1個、蛋清5g、水適量
廣式蓮蓉月餅的做法步驟
1.轉化糖漿、油、枧水拌勻,倒入面(mian)粉中和成面(mian)團,餳(xing)1-2小時(shi)。
2..分割成10個劑子(zi)。
3..制成(cheng)圓形狀。
4.蓮蓉餡分成10份,團成圓形。
5.取一個劑子,按扁放入蓮蓉餡。 用(yong)手(shou)虎口慢慢向(xiang)上推,最后把口收嚴實,用(yong)月餅(bing)模子按壓成(cheng)型。
6.做出來的月餅坯子(zi)。
7.烤箱180度預熱,先(xian)烤5分鐘,取出來刷蛋黃液(ye)。
8.用160度再烤20分鐘,取(qu)出來晾涼。
9.切開一個,看里邊的餡料夠(gou)足吧。
