一、米豬肉是什么意思
市場上的豬肉質量參差不齊,加上不良商家太多,需要我們學會辨識豬肉的好壞(huai),其中有一種(zhong)叫“米豬肉”的豬肉要(yao)格外(wai)注意。
“米豬肉(rou)”又稱(cheng)為“米心(xin)(xin)豬肉(rou)”,是一種(zhong)含有寄生蟲幼蟲的病豬肉(rou),“米心(xin)(xin)”呈黃豆大小,水泡樣(yang)、半透明,人若誤(wu)食(shi)了這種(zhong)“米心(xin)(xin)”,就會(hui)在人體小腸長出(chu)(chu)長達(da)2~4米的絳蟲,就是絳蟲成蟲排出(chu)(chu)的節片(農村俗稱(cheng)“寸白蟲”)。
人吃了未煮熟的(de)(de)米豬肉(rou)或含囊(nang)蟲(chong)(chong)(chong)的(de)(de)豬肉(rou)后,包囊(nang)即被(bei)消化(hua),囊(nang)蟲(chong)(chong)(chong)頭節吸附于(yu)腸壁,從(cong)頸節不斷生出(chu)節片,約2-3個月發育為成蟲(chong)(chong)(chong)。成蟲(chong)(chong)(chong)在人腸內壽命(ming)由數年至(zhi)20年不等(deng)這種寄(ji)(ji)生蟲(chong)(chong)(chong)可以引(yin)發人類兩種疾病,一是(shi)絳蟲(chong)(chong)(chong)病,即誤食米心豬肉(rou)的(de)(de)“米心”后,在小腸寄(ji)(ji)生2~4米的(de)(de)絳蟲(chong)(chong)(chong);
另(ling)一(yi)種(zhong)是囊蟲(chong)(chong)(chong)(chong)病(bing)(bing)(bing),即誤(wu)食了絳蟲(chong)(chong)(chong)(chong)的蟲(chong)(chong)(chong)(chong)卵后,蟲(chong)(chong)(chong)(chong)卵在胃液、腸(chang)液的作(zuo)用(yong)下,孵化出幼(you)蟲(chong)(chong)(chong)(chong),這些幼(you)蟲(chong)(chong)(chong)(chong)鉆入腸(chang)壁組(zu)織,經血液循環帶到全身,在肌(ji)肉里(li)長(chang)(chang)(chang)出一(yi)個(ge)個(ge)像“米(mi)心(xin)豬肉”一(yi)樣的囊蟲(chong)(chong)(chong)(chong)。有的患(huan)者還會同時(shi)患(huan)上(shang)了絳蟲(chong)(chong)(chong)(chong)病(bing)(bing)(bing)和(he)囊蟲(chong)(chong)(chong)(chong)病(bing)(bing)(bing)。囊蟲(chong)(chong)(chong)(chong)可(ke)以寄生在人(ren)的心(xin)臟、大腦、眼睛(jing)等(deng)重要器官,如(ru)長(chang)(chang)(chang)在眼部,可(ke)影響(xiang)視力(li)或失(shi)明,如(ru)長(chang)(chang)(chang)在大腦,可(ke)引發癲癇,所以囊蟲(chong)(chong)(chong)(chong)病(bing)(bing)(bing)比(bi)(bi)絳蟲(chong)(chong)(chong)(chong)病(bing)(bing)(bing)的危害要大得多,治療(liao)起(qi)來(lai)也相(xiang)對比(bi)(bi)較麻煩。
二、米豬肉是由什么寄生蟲引起的
米豬肉(rou)中的(de)(de)寄生蟲(chong)是豬肉(rou)絳蟲(chong)囊(nang)尾蚴,即豬肉(rou)絳蟲(chong)的(de)(de)幼(you)蟲(chong),它是由于豬吃了帶有絳蟲(chong)卵的(de)(de)食物后(hou),絳蟲(chong)突破豬肉(rou)的(de)(de)消(xiao)化(hua)系統進入到肌肉(rou)組織的(de)(de)。
一(yi)般情況下,豬(zhu)(zhu)(zhu)(zhu)(zhu)在吃了(le)(le)有絳蟲(chong)卵(luan)的食物(wu)后,絳蟲(chong)卵(luan)在豬(zhu)(zhu)(zhu)(zhu)(zhu)體內胃酸和酶(mei)的作(zuo)用(yong)下開始孵化,生(sheng)出六鉤(gou)蚴。六鉤(gou)蚴接著進入豬(zhu)(zhu)(zhu)(zhu)(zhu)的循環(huan)系統,最(zui)終在肌肉組織(zhi)、腦(nao)組織(zhi)等地方停(ting)留,發(fa)育(yu)(yu)成(cheng)囊尾(wei)蚴,并(bing)(bing)被(bei)豬(zhu)(zhu)(zhu)(zhu)(zhu)組織(zhi)包圍形(xing)成(cheng)一(yi)個囊(cyst)。當人(ren)吃了(le)(le)未煮熟的有絳蟲(chong)囊尾(wei)蚴的豬(zhu)(zhu)(zhu)(zhu)(zhu)肉后感染,囊尾(wei)蚴在人(ren)體小(xiao)腸發(fa)育(yu)(yu)成(cheng)豬(zhu)(zhu)(zhu)(zhu)(zhu)肉絳蟲(chong)成(cheng)蟲(chong),頭(tou)節掛在小(xiao)腸壁以(yi)吸取營養和并(bing)(bing)分生(sheng)出節片以(yi)繁殖后代(dai)。?
特殊情況下,人偶(ou)然進食了豬(zhu)肉絳(jiang)蟲(chong)卵,蟲(chong)卵發育(yu)出(chu)的六鉤(gou)蚴(you)可能通(tong)過(guo)人體(ti)循(xun)環(huan)系統循(xun)環(huan)到腦組(zu)織或者眼球里發育(yu)成(cheng)包(bao)囊,危(wei)及人體(ti)健康甚(shen)至生命(ming)。
三、怎么看是不是米豬肉
判斷是否是米豬肉,可以觀察豬肉的(de)切面(mian),如果發現(xian)米(mi)(mi)(mi)粒大(da)小的(de)水(shui)泡狀物,即可斷定(ding)為米(mi)(mi)(mi)豬(zhu)(zhu)肉;另外,米(mi)(mi)(mi)豬(zhu)(zhu)肉一(yi)般(ban)不鮮亮,瘦(shou)肉及五(wu)臟、器官上都有(you)或(huo)多或(huo)少米(mi)(mi)(mi)粒狀的(de)囊包。還有(you)一(yi)種方(fang)法(fa)是(shi)(shi)用刀(dao)子(zi)在肌(ji)肉上切,一(yi)般(ban)厚度1厘米(mi)(mi)(mi),長度20厘米(mi)(mi)(mi),每隔1厘米(mi)(mi)(mi)切一(yi)刀(dao),切4~5刀(dao)后(hou),在切面(mian)上仔細看,如發現(xian)肌(ji)肉上附有(you)石榴籽(zi)一(yi)般(ban)大(da)小的(de)水(shui)泡,即是(shi)(shi)囊包蟲,這(zhe)種豬(zhu)(zhu)肉即是(shi)(shi)米(mi)(mi)(mi)豬(zhu)(zhu)肉。
