以前(qian)天津人探親訪友的時候要(yao)攜帶(dai)禮物(wu),講究送(song)"八件"。
傳(chuan)統的八(ba)件包(bao)括福字(zi)餅、祿字(zi)餅、壽字(zi)餅、喜字(zi)餅、如(ru)意(yi)、棗花、聚(ju)寶盆、蝦酥(su),采用山楂、玫瑰、青梅(mei)、白糖、豆沙、棗泥、椒(jiao)鹽、葡萄干等八(ba)種(zhong)餡(xian)心(xin),外裹(guo)以含食(shi)油的面,放在各種(zhong)圖案的印模里精(jing)心(xin)烤制而(er)成。
"八(ba)(ba)件(jian)"其中(zhong)又有大八(ba)(ba)件(jian)兒和(he)小(xiao)(xiao)(xiao)八(ba)(ba)件(jian)兒之分。大八(ba)(ba)件(jian)兒包(bao)括棗花、福(fu)字、祿(lu)字、壽字、喜字、卷(juan)酥、核桃酥、蠟(la)餅(bing);八(ba)(ba)小(xiao)(xiao)(xiao)件(jian)包(bao)括棗方子、杏(xing)仁(ren)酥、小(xiao)(xiao)(xiao)柿子、小(xiao)(xiao)(xiao)桃、小(xiao)(xiao)(xiao)杏(xing)、小(xiao)(xiao)(xiao)石榴、小(xiao)(xiao)(xiao)蘋果、小(xiao)(xiao)(xiao)核桃。
隨著時代的發展(zhan),“八件(jian)”也(ye)在不斷推陳出新(xin),一些(xie)新(xin)品種也(ye)加入到“八件(jian)”的行列中,且分(fen)類更為細致(zhi)。
1、制作原(yuan)料(liao)不同:京八(ba)(ba)件(jian)以(yi)棗泥、青梅(mei)、葡萄(tao)干、玫(mei)(mei)瑰、豆(dou)沙(sha)、白糖、香蕉、椒鹽等八(ba)(ba)種(zhong)(zhong)原(yuan)料(liao)為餡,用豬油(you)、水(shui)和面做皮,以(yi)皮包餡,烘烤而成(cheng)(cheng);津八(ba)(ba)件(jian)采用山楂(zha)、玫(mei)(mei)瑰、青梅(mei)、白糖、豆(dou)沙(sha)、棗泥、椒鹽、葡萄(tao)干等八(ba)(ba)種(zhong)(zhong)餡心,外裹以(yi)含食油(you)的面,放在各種(zhong)(zhong)圖(tu)案(an)的印模里精心烤制而成(cheng)(cheng)。
2、類別不同:京八(ba)(ba)(ba)件(jian)(jian)分為(wei)大八(ba)(ba)(ba)件(jian)(jian)、酒皮(pi)八(ba)(ba)(ba)件(jian)(jian)、酥皮(pi)八(ba)(ba)(ba)件(jian)(jian)和(he)小(xiao)(xiao)八(ba)(ba)(ba)件(jian)(jian);津八(ba)(ba)(ba)件(jian)(jian)分為(wei)大八(ba)(ba)(ba)件(jian)(jian)、小(xiao)(xiao)八(ba)(ba)(ba)件(jian)(jian)和(he)后(hou)來(lai)的高檔細(xi)八(ba)(ba)(ba)件(jian)(jian)。
